Carol’s Anzac biscuits

Classic. These are slightly chewy, the way they *should* be 😉

  • 1 c plain flour
  • 1 c sugar
  • 1 c rolled oats
  • 3/4 c coconut
  • 1.5 tsp bicarb soda
  • 2 tbs boiling water
  • 1 tbs golden syrup
  • 1/2 c butter

Mix all the dry ingredients (except bi-carb). Melt butter and syrup. Dissolve bi-carb in water, add to the butter mix. Add to dry ingredients. Drop by dessertspoon full onto greased trays, and bake 20 mins, until golden, in a 150C oven (moderate-slow).
