Super easy, surprisingly good brekky-bar type slice, containing a fruit layer between oat-based layers – and it’s vegan, so perfect when you forgot to buy eggs. And yeah, no added sugar is necessary (it’s got plenty from the fruit).
Oat stuff:
- ca. 3 cups of oats or mostly oat-based museli, can add some ground nuts too, whatever you like
- a mashed ripe banana
- spices, e.g. cinnamon, cardamom, ginger, for example
- water, probably about 1/2 to 1 cup, or a mix of oil and water
Blend the oats a little. More blending results in a smoother finish. Possibly could get away with none, but if so would suggest subbing in a bit of flour or ground flax as a bit of a glue. Oil is not required, but is nice, and allows the oat part to get more crispy. Taste it – and adjust for salt/sugar/spice. Once it is all mixed up, and can hold together but is not too moist, split in half and press half firmly into a lined tin.
Fruit stuff:
- about 2 cups of fruit – e.g. blueberries, apples, stonefruit, whatever is easy
- 2 tbs of cornflour
Blend this up too. Spread over the lower half of the oats.
Then crumble over the rest of the oat mixture.
Bake in 180C for about 30 mins until golden. Cool in the tin, and if you’re keeping it for longer, the fridge is a good idea.
