There are many versions for this, I settled on this one for some reason. Thanks, past Liz.
- Spice paste:
- 6-8 chillis
- 3 cloves garlic
- 3 shallots
- 2 lemongrass
- 1 inch ginger
- 1 tbs ground corriander
- 1/4 oil
- 1.5 c dry roasted peanuts
- 1 heaped tbs tamarind, dissolved in 1/4 c hot water
- 1 c water
- 1.5 tbs sugar
- 1 tbs kecap manis
Blend spice paste ingredients, then fry in oil until aromatic. Add other ingredients, stir well, simmer, stirring on low for 3 mins until smooth. Best served at room temp.
