Malaysian peanut sauce

There are many versions for this, I settled on this one for some reason. Thanks, past Liz.

  • Spice paste:
    • 6-8 chillis
    • 3 cloves garlic
    • 3 shallots
    • 2 lemongrass
    • 1 inch ginger
    • 1 tbs ground corriander
  • 1/4 oil
  • 1.5 c dry roasted peanuts
  • 1 heaped tbs tamarind, dissolved in 1/4 c hot water
  • 1 c water
  • 1.5 tbs sugar
  • 1 tbs kecap manis

Blend spice paste ingredients, then fry in oil until aromatic. Add other ingredients, stir well, simmer, stirring on low for 3 mins until smooth. Best served at room temp.
